Grilled cheese having a major comeback, so I thought I’d throw my Bacon Avocado Mozzarella Grilled Cheese in the ring to win all the grilled-cheeses-things.
Grilled cheese is an amazing comfort food that seems to carry over from most of our childhoods, and this one is no exception. This Bacon Avocado Mozzarella Grilled Cheese is a nice mild flavor profile that balances beautifully with a big bowl of roasted red pepper and tomato soup. Luckily I found a great one from cookieandkate.com! The two sing wonderfully together and make for a great dinner on a cold evening.
The bacon adds a nice saltiness to the avocado and mildness of the mozzarella, but the garlic salt is really the big control. Either way you’ll have to eye how much you use, but I do suggest hitting both sides of the grilled cheese since the mozzarella isn’t a very salty cheese. Your garlic salt will give it the little help it needs to get the flavor just right. The cook time is also a really hard one to nail down, because preference of how toasted you like your grilled cheese and your bread choice. Thankfully you can just eye the bread as it cooks to get it just the way you like, grilled cheese being a very forgiving thing to cook, and all that. Enjoy and good luck!
Bacon Avocado Mozzarella Grilled Cheese Recipe
Prep Time: 10 mins | Cook Time: 9-11 mins | Total Time: 21 mins
8 Slices of Bread
12 Slices of Bacon
8 Slices of Mozzarella
Garlic Salt, To Taste
Step 1. Begin cooking the bacon in a skillet on medium high heat. While the bacon cooks, butter and garlic salt one side of each piece of bread and place face up on a plate. Remove the bacon and place on paper towels to absorb the excess grease.
Step 2. While the bacon is cooking/resting slice your avocado and set aside.
Step 3. Once all your bacon is cooked preheat a frying pan to medium high. Place a slice of bread on the pan butter side down. Place one slice of mozzarella, a few slices of avocado, 3 strips of bacon, another slice of mozzarella, and finally another piece of bread (butter side up). Cook for 2-3 minutes or until desired doneness. Turn while stabilizing the bread with your fingers to keep the sandwich from falling apart on the flip. Cooke for an additional 2-3 minutes and serve.
