Cherry Tomato Balsamic Salmon

This isn’t your run-of-the-mill bland salmon. This cherry tomato balsamic salmon is a sweet and tannic combination that really makes the flavor profile of this dish straight explosive. The salmon is a crispy skinned salmon, so don’t remove the skin from the salmon unless you absolutely want to. The reduction by itself could liven up anything from salad to pasta, but paired with the salmon these two make the best dynamic duo of all time… minus the capes.  

Cherry Tomato Balsamic Salmon

The tomato and balsamic reduction is meant to balance out the salmon, so be sure that you get a bit of both in every bite, otherwise the reduction by itself is overpowering. This salmon is a nice one to serve up with some warm crusty bread and a plate of shredded Parmesan cheese. Mop up the balsamic reduction left on the plate after eating the salmon and dip it in the Parmesan cheese. If you’ve never had this, it’ll change your life… and there’s no going back. Cherry Tomato Balsamic Salmon

Salmon With Cherry Tomato & Balsamic Reduction Recipe

Serves 4

Prep Time: 3 mins  |  Cook Time: 27 mins  |  Total Time: 30 mins

  • 1 Pint Cherry Tomatoes, Halved
  • 1 Cup Balsamic Vinegar
  • ½ Tbsp Dried Crushed Basil
  • 1 Tsp Italian Seasoning
  • Black Pepper, to Taste
  • Garlic Salt, to Taste
  • 2 Cloves Garlic, Minced
  • Lemon Juice, to Taste
  • 4 Salmon Fillets
  • 2 Tbsp Olive Oil, Divided

Step 1. Preheat your olive oil in a small sauce pan on medium-high. Add your tomatoes and saute for 5 minutes. Add your garlic and saute an additional 2 minutes. Add your balsamic vinegar, basil, Italian seasoning, and pepper. Reduce for 20 minutes on medium-low.

Step 2. Spritz your salmon fillets with lemon juice, garlic salt, and black pepper to taste. Preheat 1 Tbsp of olive oil on medium-high heat in a large frying pan. Fry for 5-7 minutes, or until clearly cooked through by the appearance of the sides of your filet. Remove salmon, top with your reduction, and serve.
